Salad Dressing - Master Recipe

1 cup extra virgin olive oil
1/2 cup of any vinegar, lemon or lime juice
1/2 cup honey, maple syrup or jelly
1 heaping tablespoon Dijon mustard
1 heaping tablespoon fresh herb or spice (optional)
a sprinkle or two of sea salt and freshly ground pepper

Pour everything into a Mason jar and shake vigorously until combined. This will stay fresh in the refrigerator for several weeks. Makes about 2 cups.
